Pizza therefore has a very long history , very complex and uncertain, however the first attestations of the word date back to 997 near Gaeta. In antiquity in the Mediterranean basin the pizza was a very poor dish made with lard, cheese and basil (sometimes with fish scraps) widespread in all regions. Pizza as we know it arrived in 1889 when the Neapolitan chef Raffaele Esposito created the pizza Margherita (tricolor) in honor of Queen Margherita of Savoy: tomato, mozzarella and basil to honor the Queen and Italy! Until around 1830 pizza was sold exclusively in street stalls and by street vendors outside the ovens, then the pizzerias arrived! The ancient Port’Alba pizzeria in Naples is considered the oldest Italian pizzeria still existing today!
