The history of bread begins about 10,000 years ago, with the beginning of agriculture. The first grain doughs were prepared by Near Eastern peoples and baked on hot stones. These were simple flatbreads made from coarse flour and water.

Later, around 3,500 BC, the Egyptians were the first to discover natural leavening: thanks to a dough forgotten in the sun, bread became softer and tastier. This discovery revolutionized bread-making and spread to ancient Greece and then to the Roman Empire, where the first public bakeries were established.
